As a kid growing up, when my grandma used to cook chicken, you could smell it! Today's store bought, factory produced chickens don't have that smell or taste to them. In addition, we're not sure what we're buying. The chicken I buy from John Henry's is like my grandma's. Flavorful and pasture raised without GMO feed. I usually buy a full "bird" but I didn't this time. I decided to use tenders to make my chicken fettuccine lasagna. Tender, easy to prepare, and flavorful.

Marrow bones come in all shapes and sizes because they are cut from all the parts of the legs of the cow. For making bone broth this is no problem, because it's what's inside that matters so they don't have to be pretty. There is a very small portion of the femur bone that is very thick and very straight, this is the center-cut marrow bone.
